Quick frozen blackberries prepared from fresh clean sound blackberries by cleaning and quick freezing in accordance with good commercial practice. The Blackberries should be free flowing and possess a clean delicate natural flavour of blackberry with no off flavours present. The berries should have a firm but succulent texture. The colour of the berries should be uniformly dark purple/black and there should not be any stalks in a given sample. The process should ensure stability of colour and flavour and product temperature shall be lower than 180C. The samples should always be examined and the grades ascertained by trained personnel experienced in quality control procedures
