Courgette, Pea & Feta Frittata

Ingredients
- - 2 courgettes I use a mixture of yellow and green, halved and sliced into 5mm slices
- - 450g frozen peas
- - 200g feta, crumbled
- - 8 eggs
- - 4 garlic cloves, finely chopped
- - A good handful of mint leaves, finely chopped
- - 2 tbsp olive oil
- - Salt and pepper, to taste
Method
- Heat the olive oil in a deep non-stick frying pan over medium heat.
- Add the garlic and sliced courgette. Sauté for 3–4 minutes until softened.
- Stir in the peas and cook for another 2 minutes.
- In a bowl, whisk the eggs with a pinch of salt and pepper. Stir in the mint and most of the feta.
- Pour the egg mixture into the pan. Cook gently for 5–6 minutes until mostly set.
- Scatter the remaining feta on top, then finish under a hot grill for 2–3 minutes until golden and puffed.
- Let it rest for a couple of minutes before slicing. Serve warm or at room temperature.
