Courgette, Pea & Feta Frittata

Ingredients

  • - 2 courgettes I use a mixture of yellow and green, halved and sliced into 5mm slices
  • - 450g frozen peas
  • - 200g feta, crumbled
  • - 8 eggs
  • - 4 garlic cloves, finely chopped
  • - A good handful of mint leaves, finely chopped
  • - 2 tbsp olive oil
  • - Salt and pepper, to taste

Method

  1. Heat the olive oil in a deep non-stick frying pan over medium heat.
  2. Add the garlic and sliced courgette. Sauté for 3–4 minutes until softened.
  3. Stir in the peas and cook for another 2 minutes.
  4. In a bowl, whisk the eggs with a pinch of salt and pepper. Stir in the mint and most of the feta.
  5. Pour the egg mixture into the pan. Cook gently for 5–6 minutes until mostly set.
  6. Scatter the remaining feta on top, then finish under a hot grill for 2–3 minutes until golden and puffed.
  7. Let it rest for a couple of minutes before slicing. Serve warm or at room temperature.
