Honey Flapjacks

Yield: Makes 12–16 pieces
Ingredients
• 200g butter
• 200g soft light brown sugar
• 200g honey
• 400g porridge oats
• Pinch of salt (optional)
Method
1. Preheat the oven to 180°C (160°C fan). Line a 20x30cm tin with baking paper.
2. In a large saucepan, gently melt the butter, sugar and honey together. Once melted, let it bubble for 2–3 minutes, stirring occasionally.
3. Take off the heat and stir in the oats (and a pinch of salt if using) until well combined.
4. Tip the mixture into the prepared tin and press it down firmly with the back of a spoon.
5. Bake for 20–25 minutes, until golden and just set. The centre should still feel soft.
6. Cool in the tin before slicing into squares or bars.
