Red Cabbage & Pomegranate Slaw

Ingredients

• 1 small red cabbage, finely shredded
• 4 large carrots, grated or julienned
• 1 small red onion, finely sliced
• Seeds from 1 pomegranate
• 1 tbsp dried mint
• 2 tbsp pomegranate molasses
• 2 tbsp Dijon mustard
• 2 tbsp red wine vinegar
• 6 tbsp olive oil
• Salt and pepper, to taste

Method

1. In a large bowl, combine the cabbage, carrots, red onion and pomegranate seeds.
2. In a small bowl or jar, whisk together the pomegranate molasses, Dijon mustard, red wine vinegar, olive oil and dried mint. Season with salt and pepper.
3. Pour the vinaigrette over the slaw and toss thoroughly to coat.
4. Let it sit for 10 minutes before serving to allow the flavours to meld.
5. Keeps well in the fridge for up to 2 days.
