John's "Never Fails" Loaf

5 cups Strong White Bread Flour, 1 cup Country Malt Brown Flour, 520 ml water and 12 grams of Fresh Yeast.
Mix all ingredients in a mixer with a dough hook for 3-4 minutes.
Then hand pulled bakers folds in the bowl every 10 minutes three times.
A final 20 minute rise and into the oven in a pre-heated (really hot) clay dutch oven for 45 minutes on 230 degrees.
