Grilled Goats Cheese with Grilled Peppers

For four people
2 Flat breads
2 Whole Chargrilled Peppers
6 Anchovies (made into a paste using a little of the oil from the peppers)
4 x 1.5cm slices of Goats Cheese Log

Cut each Flat bread in half and lightly toast.
Place the toasted Flat breads onto a baking sheet 
Spread the toasted flat breads with the anchovy paste
Then layer on each half a well drained Chargrilled pepper, a 1.5cm round of Goat's Cheese Log  and finish with a drizzle of olive oil 
Put under the grill or into a hot oven for 5 minutes
Serve with lots of watercress or rocket and a drizzle of olive oil.
