The beans shall be freshly picked clean free from disease blemish and fibrous tissue. The internal tissue of the bean shall be moist and sweet. Only short-podded varieties of green beans should be used namely clean sound immature bean pods of the species Phaseolus Vulgaris. The processing should ensure stability of colour and flavour.
